Sprelle (Sprell)

 

Ingredients

Flour
Sugar
Butter
Vanilla sugar
Salt
Raising powder
Sweet white wine
Rhum
Lemon
Lard


Preparation method

Lay the flower on the pastry board and make a hole in the centre where you'll put three eggs, 100 grams of sugar, 100 grams of softened butter, the grated rind of the lemon, a pinch of salt and a pouch of raising powder; knead the whole mix with half a glass of wine and two spoons of rhum, until you obtain a soft dough, which you’ll spread into a thin round. Make it into thin stripes and cut each stripe into small portions (stripes, preferably); fry them in abundant hot lard (or oil) till both sides are golden; then lay them on paper towels and sprinkle with icing sugar.

Sprelle are typical of Carnival and San Giuseppe Festival.
