Pissarei e fasö

 

Ingredients

All purpose flour
Bread crumbs
Salt
Water
Butter
Oil
Boiled ‘borlotti’ beans
Pepper
Tomato paste
Lard
Grana cheese

 

Preparation method

Put 500 grams of flour on the table and add 200 grams of bread crumbs you had previously mixed with boiling water (or milk or very hot broth), knead the dough till it becomes soft and shape  half a cm thick "snakes". Cut them into equally small pieces, and with your thumb side press them gently, thus shaping them into small dumplings.

Brown butter, oil, a small chopped onion and lard. Add a good quantity of baked beans (broad or white beans), salt, pepper and roast them slowly; add the tomato sauce, diluted with warm water (or broth), then keep cooking slowly, adding some water or broth if necessary. The sauce will have to look "velvety".

Cook pissarei in abundant salted water till they float and mix them with the sauce and the grated grana cheese.
