Piccola di cavallo (Picula ‘d cavall)

 

Ingredients

Horse meat
Onion
Pistà ad grass (pounded lard)
Oil
Broth (or white wine)
Carrots
Tomato sauce
Butter


Preparation method

Brown butter, an onion and two chopped carrots with oil, butter and ‘pistà ad grass’ (pounded lard, obtained from chopping with a knife lard, parsley and some pealed garlic cloves), add 600 grams of horse meat and let it turn golden for about 10 minutes. Pour two glasses of broth (or white wine) where you have previously melted half a glass of tomato paste. Let simmer for about 20 minutes. Serve with ‘polenta’.
